I love watching the Food Channel. Mouth-watering recipes and scrumptious looking desserts … it’s the one channel that I can watch for the entire afternoon! Sometimes, it is challenging to scribble down the recipes. Reminds me of my varsity days where we had to pay attention to every single detail of the lecture, not just the notes written on the white board.

The other night, I saw a salmon dinner recipe on the TV show, Barefoot Contessa. It was interesting as I’ve never seen an Asian marinade for a salmon dish before. Luckily enough, I was able to write down the recipe. I missed the recipe for the side dish, which looked like yellow noodles to me. And so, I decided to substitute the side dish with quinoa instead. The salmon marinade is very flavourful, hence any neutral-tasting side dish would be a perfect complement.

Prepare the marinade sauce for the salmon. Place the salmon in  a baking dish. Spread Panko bread crumbs onto the salmon. Pour the marinade sauce over the salmon, and let sit for 15 minutes. Bake the salmon in the oven at 500F for ~20 minutes.

When cooked, it should look like this … yummy …

Bring the quinoa and water to boil (typically 1 cup of quinoa, and 2 cups of water). Lower the heat and simmer for 15 minutes.

In a large frying pan, stir-fry shallots, green pepper, yellow pepper, and cauliflower (you can stir fry any kind of vegetable here!). In a large mixing bowl, mix some key lime juice (2-3 key limes) with the quinoa. Add the stir-fry mix into the bowl and toss until the mixture is even. Add salt and pepper to taste.

Serve the salmon warm! The quinoa can be served cold or hot 🙂

RECIPE

Main Ingredients:

1 big/full piece of salmon

Any vegetables to your liking

Marinade:

2 Tbsp chopped ginger

2 Tbsp chopped garlic

2 Tbsp scallions/green onions

1 cup soya sauce

1/4 cup rice vinegar

1 cup fresh lemon juice

2 Tbsp oyster sauce

1 Tbsp fish sauce

1 Tbsp chilli paste
